Apprentice Commis Chef (Fixed Term Contract – 18 Months)
What is a Commis Chef?
A Commis chef at the National Theatre is the first rung of the ladder to becoming a great chef.
In our kitchens you will carry out food preparation and basic cooking tasks under the supervision of the team.
On top of this you will also be involved in an exciting, fast paced service and get the opportunity to develop your skills and try different cooking techniques and practices such as smoking, curing, brining etc.
The primary object of a Commis chef is to learn and understand how to carry out basic functions in every section of the kitchen.
Purpose of the Apprenticeship
Working as part of our Enterprises Department, the Commis Chef Apprentice will learn core kitchen skills and knowledge of food preparation and processes and good customer service. They will also develop transferable skills such as teamwork, communication and professionalism. At the end of the apprenticeship you will be qualified to find work in a professional kitchen or progress to study for a Level 3 qualification or apprenticeship.
This position is not open to those who already have a Level 4 qualification, such as a degree, foundation degree or any post graduate qualification or who have previously worked professionally in kitchens.
The apprenticeship will be split between the National Theatre and the Westminster Kingsway College
With Westminster Kingsway College:
You will spend 1 day a week at Westminster Kingsway College, where you will learn about a wide range of food preparation, cooking techniques and methods, knife skills, Health and safety, food storage and stock rotation. You will learn about classic cuts of vegetables, meat, fish, poultry, sauces, baking and dessert preparation, portion control, allergens, diet and nutrition, seasonality and availability of ingredients.
You will spend the equivalent of 1 day a week doing work for college.
What you will do during the apprenticeship at the NT:
Your remaining time will be spent at the National Theatre working in The Terrace and House restaurants and in our event space, the Deck. At the NT you will work in several sections of our kitchens including; grill, fish, sauce, vegetable, cold larder and pastry/bakery. You will have the opportunity to learn new and traditional cooking techniques such as smoking, brining/curing, bread making etc. As well as this you will get a detailed insight in to cooking and preparing vegan foods and some scientific cooking using molecular gastronomy tools and ingredients.
What you must have to apply
- Be able to show us that you have an interest in food and in giving good customer service. An enthusiasm to learn and a willingness to take instruction from staff at the NT and at College.
- Show us that you have a mature attitude and take responsibility for your own work.
- The ability to follow strict Health & Safety rules.
- Be able to show us that you can work well within a team, and can communicate clearly.
- The ability to work effectively under supervision and be self-motivated to work on your own initiative.
- A helpful, positive and flexible approach and attitude whether the work is routine or exciting.
- Be punctual and good at managing your own workload.
